GREEK RECIPE: Chicken Pilaf

Heat butter in a pot and sautee onion until golden. Add chicken and brown. Add tomatoes, salt and pepper. Bring to a simmer covered for 30 minutes. Add rice and 2 cups boiling water. Stir rice well so that kernals do not stick togehter. Bring to a simmer covered over lowest flame possible for 25 minutes more. Do not stir again. Do not remove cover until ready to serve. Serves 6.
