Greek Recipe: Broiled Codfish Fillets and Pilaf

GREEK RECIPE: Broiled Codfish Fillets and Pilaf

  • 2 lbs dried codfish fillets
  • 1.5 Qts water
  • pepper to taste
  • 1 med onion minced fine
  • 2 Tbs minced parsley leaves
  • 1 Tbs tomato paste
  • 1 Ibs butter
  • 2 cups rice

For the broiled Codfish: Soak codfish over night in cold water to cover. Rinse and change water several times. Drain and cut fish into serving pieces. Place water in a skillet. Add codfish, pepper, onion and parsley. Bring to a boil and reduce to simmer covered for 20 minutes. Remove from flame.

For the Pilaf: Drain out 4 cups liquid from the fillets and place in a pot. Add tomato paste and butter. Bring to a boil. Add rice and mix thoroughly so that rice does not stick together. Reduce to simmer covered 25 minutes. Do not stir again or remove cover until ready to serve. Serve fillets with rice on the side. Serves 6.
