Greek Recipe: Meat Loaf

GREEK RECIPE: Meat Loaf

  • 2 lbs ground lean beef
  • 2 slices whole wheat bread, soaked in water, squeezed dry and broken into bits
  • 1 cup drained solid pack tomatoes
  • 1 egg
  • 1 lg onion mixed fine
  • 1 clove garlic minced fine
  • 1 tsp dried spearmint leaves
  • 4 shelled hard boiled eggs
  • salt and pepper to taste

 

Place all ingrediants except hard boiled eggs in a bowl. Knead thoroughly. Grease a baking dish and put half the mixture in the bottom. Place eggs lenght wise in the center in a row. Pack remaining mixture over eggs to make a loaf. Bake in preheated 350° oven for 40 minutes until the top becomes golden brown. Transfer to a platter and let stand about 15 minutes so its easier to slice.
