GREEK RECIPE: Crusty Dough for Meat Pie

Sift flour and salt into a bowl. Add olive oil and mix thoroughly with a wooden spoon. Add egg and flour and continue to mx until everything is blended. Add a little water at a time and knead with your hands until dough does not stick to bowl. Turn out on a floured board and knead rythmically adding a little more flour to the board if necessary until dough is smooth and elastic and does not stick to fingers when pressed into it. Divide dough into two parts, making one portion a little larger than the other. Shape dough into balls and brush lightly with olive oil. Place on a greased pan, cover with a clean cloth and set in a warm place for 30 minutes.
